99.8% milk fat does not mean 99.8% “milk content.”

Why Does Moisture Matter in Ghee?

Ghee is produced by clarifying butter and removing water and non-fat milk solids.

Therefore, moisture is an important quality parameter.

FSSAI’s cited standard specifies a maximum moisture level of 0.5% for ghee.
